Versatilityy is a key issue where I work and we have far to many staff working in their sylo's and unable to contribute to other areas of the business.
There are currently some spreadsheets kicking around which shows a teams current skill levels on a task, the best one has the task on the left of it and then rates the staff on their competency
1 - no skill
2 - Trained but requires supervision
3. Competent
4. Can train others
Does anyone have any other good ways of measuring staff versatility?

Your spreadsheet sounds good – simpler the better, in my experience!
I believe you need a high-level approach to your issue – what exactly do you mean by versitility? Is it a flexible pool of staff to move around teams, or just too many subject matter experts?
Including skills & knowledge in your ratings will give a better overall picture. You’ll need to know what skills & knowledge are needed in the business at any time – when, where and why you would need to move people, then think about development to fill the gaps.
On the subject experts matter – we got our Technical Specialists together to form a network to help each other – if they saw the benefit, of course! Since then, they’re starting to pass on knowledge to those less blessed – result!
