Skills practices for spotting buying signals and closing the sale? Help!

Hi. I'm trying to develop a 3 hour workshop that will support telephone customer service staff in spotting buying signals and in closing the sale. The material content is not a problem, but i'd like to use some imaginative ways in which to get the delegates practicing their skills. Can anyone offer any ideas?
