Try Apex
You could try looking at the Apex website. They are an organisation who work with ex-offenders to help them into employment so they may have some usueful information. Web address is http://www.apextrust.com I think.

Other Options
Nacro also work with offenders and ex-offenders. You could challenge opinions by starting with a list of high profile offenders now in employment. Geoffry Archer has a criminal record, and I believe that there is a high profile tv/radio presenter who also has previous. There are plenty of examples for case studies if you do a bit of digging round.

There are quite a few EQUAL projects who help ex-offenders. It would be a good idea to approach them and they can provide examples of the people they have helped.
Try this link. The ones I am familiar with is PRISE, SOVA and NEWLIFE.
NEWLIFE run seminars for employers in practical help in employing ex-offenders.
Diversity is a great theme to run this workshop and big firms like Marks&Spencers and industries such as construction and retail all employ ex-offenders.
