Can anyone recommend a company who specialise in Training Databases? Also what training information do you currently record?

Snowdrop systems are good and their offering is highly customisable but it depends on how much you want to spend as to what will work for you.
Training database
Autosribe do a database, it is really good and efficent you can gain more information from autoscribe.co.uk, this was made mostly for pharmaceutical but i am sure it can be adapting into most companies.
