I am looking for an open course or seminar that covers the subject of Empathic Listening for my CEO to attend. A one day course would be most suitable, preferably held in central London. Can anyone help with any course suggestions please?

There is an incredible course by Dr. Tony Alessandra (http://www.alessandra.com) called the Power of Listening (http://www.alessandra.com/prglisten.html).
This is a great program that comes in many forms. I would highly recommend it as I have gone through it many times. Great stuff!

Incidentally, since “emphatic listening” seems to be nothing more that a rebranding of the original “active listening” you might find it useful to broaden your search accordingly.
